Choosing your wine
Selecting the right wine depends on your individual taste and can sometimes be challenging. While some wines can be light and fruity and are meant to be consumed young, others are heavy, lots of oak and tannins and take time to "come around". We can help you choose a great wine you will be proud to serve your family and friends.

Caring for your wine
Wine kits are ready to bottle in 28 or 42 days; though you can start drinking your wine right away, it's best to wait because it will greatly improve with time. If you really, really can't wait, we can recommend a few varieties that do not require as much aging as most other wines.
The minimum time before a kit tastes good is about two weeks. This is long enough for the wine to get over the shock of bottling, and begin opening up to release its aromas and flavours. Three months is much better, and the wine will show most of its character at this point. For most whites; however, and virtually all reds, six months is needed to smooth out the wine and allow it to express mature character. Heavy reds will continue to improve for at least a year, rewarding your patience with a delicious bouquet.
Upon arriving home with your wine, please keep bottles upright for 2 to 3 days before storing on their side. Once turned, it is important to store wines in a dark, cool place with very little temperature variations.
Red wine is generally served at 16 to 20 degrees C (60 to 70 degrees F) temperature, while white wine and blushes are generally served chilled.
The winery process
Wine crafting is made easy with the help of companies like Vineco International.
- Choose your wine from one of the many varieties from Vineco.
- We will help you mix the ingredients and you will pitch (add) the yeast to initiate the fermentation process.
- We then ferment, rack, stabilize and filter your wine for you.
- You then return in four to six weeks to bottle your wine and take it home.

Wine Kits: A closer look
The less expensive kits (7.5 litres) are more concentrated, so more water is added to them to get to the 23 litre yeild.. As the kit size increases the amount of water you need to add decreases; therefore your wine is fuller bodied, fuller flavoured, and fuller priced. Normally region specific wines (16 litre kits) are more expensive, and need more time to age; therefore, the best wines cost the most and take the longest to age. If you need wine right away do the less expensive 4 week kits and drink right away. If you can wait and want better quality do the premium 6 week kit, 16 litre kit. All kits (other than Ice wine and Port styles) produce 23 litres or about 30 750ml bottles. Some of the wine kits currently available are listed at the bottom of this page.
Bottling options
You can bring in your own wine bottles but they must be CLEAN. We have a bottle sanitizer on site. You MUST remove or deface commercial wine labels from your bottles before you are permitted to fill them up with your own wine. 750 ml clear or green bottles may be purchased on site at a cost of about $1.10 each. One litre green bottles are $1.50 each and 1.5 litre bottles are $2.25 each (plus applicable taxes).
